Like speedy Gonzales, the fastest mouse in Mexico, restaurants serving Central American delights are mushrooming at the moment. I'm not surprised at all, as the cuisine is ideal for those who love it spicy and down-to-earth like me. Hand me a plate of rice and beans, plus a tortilla, and I'll ditch almost any oyster for it.

But what's the real deal with burrito and the like? Mexican cuisine is all about the whole thing: lots of individual pieces wrapped up in a tortilla, the thin pliable corn patty, then make a nice, thick, tasty parcel. Garnished with salsa, avocado and sour cream, heaven is then so close. Mexican burritos originated as a meal for the road that workers brought from home; so it's sort of the sandwich of Central America.

The basics are simple: rice on the side and bean puree. It's a no-brainer - beans as a mash, please. Not whole beans like from grandma's stew. If you like those, please, but on my personal list, there's a point deduction for that. So, back to basics: Grated cheese, wrap it up - done. Yep, that's about it. Delicious food doesn't have to be fancy. No veggies, no nothing. The very best part? Makes kids a lot of fun and everyone stuffed. Which, as we all know, is good for the soul! :-)

Mexican cuisine, as it is now settling in Frankfurt, is native to North America. That's why it's also fondly called "Tex-Mex": typically Texan elements like cheese, meat, beans and spices paired with Mexican tortillas.

If you like a bit of chichi on your plate, we recommend enchiladas: the spicy chili pepper sauce alone, which is what the dish essentially lives on, will bring tears of joy to your eyes. Anything that can be rolled up gets rolled up, regional differences in ingredients assumed, of course.

Or how about chicken fajitas? Marinated, grilled meat plus peppers and onions go into a corn or flour tortilla. Now what's the difference between a taco and a burrito?

Always put the filling in both, but it's the wrapping that matters. Are all the contents delicious and securely wrapped like a baby, only maybe the top is open? Bravo, burrito! If the composition is more like a crescent moon, a taco is in play. These can come as a beef, fish or chicken mix. So Mexican cuisine likes to package things up. Why this is so? "Everything tastes better in a tortilla," American crime writer Don Winslow had his private detective Boon state on the beach in San Diego, Southern California. Life is sometimes that simple.
