Yes, even a delicious piece of roast tastes just as good with a little apple wine refined. For this typical Hessian recipe you need the following ingredients:

- 2 kg pork with rind

- 2 carrots
- 1 leek
- 1 celeriac
- 250 ml clear meat stock
- 250 ml apple cider
- 3-4 tbsp oil
- Salt
- Pepper
- Caraway seeds (powder)
Preparation:
First you need to prepare the meat a little: cut it in the rind, if not already done by the butcher, and then rub the meat with the caraway seeds, salt and pepper. Now get to work on the vegetables, which you will need to clean and - if necessary - peel before cutting them into small cubes.
Once these preparations are complete, you will now need to heat the oil in a roasting pan and brown the meat well in it. After a few minutes, add the meat broth and then let the whole thing stew covered in a preheated oven at 180 degrees (convection oven 160 degrees) for about 90 minutes. Now remove the cover and let the meat braise for another 30 minutes. Once the crust is nice and crispy, remove the meat from the roaster and keep it warm. Now you need to drain the roast stock, sieve it through and then add the cider. Let the whole thing boil down well and pour it over the roast to serve. Done!
