- 1-2 bunch chopped chervil leaves
- 40 grams butter
- 20 grams flour
- 1 onion
- 1/8 litre cream
- 1 litre clear meat stock
- Salt
- Pepper
Preparation:
First you need to chop the chervil leaves as small as possible. Then cut the onion into small cubes and then put both in a pan, where you sweat the chervil and the onions in the butter. Once this is done, deglaze the whole thing with the meat stock and then let it boil well. Meanwhile, mix the egg yolk with the cream and refine the broth with it. Season with salt and pepper and serve with a nice slice of brown bread. Of course you can refine the soup after good old Frankfurt tradition also with delicious apple wine.
