Frankfurter Haddekuche (hard cake)

In Frankfurt, this cinnamon pastry has a long tradition. Sold by the city's pretzel boys, who held in their baskets not only freshly baked pretzels or cheese sticks, but also haddekuche and sometimes delicious makrönchen for consumption, this delicacy was usually sold at typical Frankfurt festivities such as the Dippemess or at the Christmas market. - 500 grams of wheat flour

- 120 grams of margarine

- 250 grams sugar

- 1 teaspoon cocoa

- 1 teaspoon gingerbread spice

- 1 teaspoon cinnamon

- ½ teaspoon cardamom

- ¾ bag baking soda

- 75 ml milk

Preparation:

The preparation is quite simple: put all the ingredients in a bowl and then mix them together to form a dough. As soon as the dough separates from the edge of the bowl give it on a surface sprinkled with flour and roll it out there. Now cut out some rectangles from the dough and brush them with egg white.
