So simple as it is tasty, this is a very popular way to prepare eel in Hesse. For this recipe you will need:
Ingredients
- 1 fresh eel
- 100 g butter
- Salt
- Fresh sage leaves
Preparation:
First, if you have not already done so, you must gut the eel, rub it well with salt, wash it and pat it dry. Then, using a thread, wrap the sage leaves around it and tie the fish at the head and tail to form a ring. Now you need to fry the herb eel in the butter on both sides - and the eel is ready to serve (but before serving, you should still remove the thread!)! Traditionally, the fish is eaten with a piece of brown bread, but boiled potatoes also fit perfectly!
