No other dish is as associated with Frankfurt as the famous "Rippcher mit Kraut". Whether the ribs are served boiled or fried is purely a matter of taste. Either way, the following ingredients are needed:
Ingredients
.- 1 kg pork ribs
- 1 onion
- 1 bunch of soup vegetables
- 3-4 cloves
- peppercorns
- 500 g sauerkraut
Preparation:
Bring 2 litres of water to the boil with the onion, cloves, soup vegetables and about 5 peppercorns. Now add the meat and let it boil for about 30 minutes. Then let it simmer for about an hour on a very low flame, do not let it boil any further!
To the ribs serve the sauerkraut, optionally bread or mashed potatoes. Of course, the ribs can also be roasted in a pan or on the grill, delicious they taste in any case!
