Smut Herring

Of course, this delicacy exists in one form or another throughout Germany, but the typical Hessian version is particularly tasty. For the preparation you need:

Ingredients

- 4 salted herrings

- 3/8 L sour cream or sour cream

- 3 onions

- 1 pickled cucumber

- 2 bay leaves

- 4 juniper berries

- 1 apple (sour)

Preparation:

First you need to cut one of the onions into small cubes and then stir them into the sour cream / sour cream together with the juniper berries and bay leaves. The whole thing you must now let soak overnight.

Now it goes to the herrings, which you should best also water for about half a day. Then free the fish from the head and tail first, before you debone them and cut them into finger-thick pieces. Now take the remaining onions and cut them into rings, while the apple and the pickled cucumber have to be cut into small cubes. Now, in layers, herring pieces, apple pieces, onion rings, cucumber pieces and cream mixture should be placed in a stoneware pot alternately. Before serving, the whole thing should be left to marinate for several hours. Especially well then taste jacket potatoes!
