4 cl Dauborn grain, 4 cl Dauborn peach liqueur, 2 cl lemon juice, 10 cl orange juice.
Pour all ingredients into mixing cup with ice cubes, shake and strain into highball glass. Garnish with a slice of lemon and a cocktail cherry and serve with straw.
The only grain spirit that tastes like grain: Dauborner
The Wagner family farms more than acres of land and produces canola for biodiesel. Primarily, though, they grow malting barley and wheat. And some of their wheat, in turn, has been used to make grain schnapps, Original Dauborner, for more than 300 years. This makes the house one of the oldest grain distilleries in Germany.
Dauborner, which is called "Dawener" in the region, was first distilled in 1655 in the Gnadenthal monastery.
At the Dauborner of the Wagners you can already recognize the original when sniffing it. The scent of grain, the mash, rises animatingly in the nose, and when drinking the impression continues; so neutral as any grain smells and tastes it just not, the original Dauborner, which incidentally has only 32% alcohol.
It is but already after the first fire distilled out, no double grain so, but with much more flavor than it has grain commonly. Because Jörg Wagner burns, instead of in the column distiller, in the copper still. It works like this: The shredded wheat is mixed with water and barley malt. It is then heated and allowed to cool again before yeast is added. The mash ferments in the vat for three days and is then distilled in the bubble. Forerun and after-run have to be carefully separated, and finally the 75-grain grain is brought to drinking strength with distilled water. But that's not all, because Jörg Wagner lets his Dauborner mature in barrels for a year before it is bottled or filled into earthenware jugs. Premium Dauborner even rests for five years.
Wagners Dauborner, which is also available with caraway seeds, serves as the basis for quite a few liqueurs; such as peppermint, peach, cherry, or citrus. Even chocolate truffles are filled with it, which are suitable as a souvenir from rehearsals, to which fresh house bread and sausage are served.
From Dauborner, which, according to Jörg Wagner, is the only grain brandy that still tastes of grain, cocktails can also be mixed, "Westwind" for example.
Among the German chefs who have been awarded 3 stars in the Guide Michelin, Helmut Thieltges (Waldhotel Sonnora in Dreis near Wittlich/Eifel) is the quietest. He neither appears on television, nor does he write down his recipes. Exclusively for the market leader but yet, also Dauborner Kümmel comes into play.
