The Flemings Selection Hotel Frankfurt-City is the ideal starting point for a city trip to the Main metropolis. Located directly at Eschenheimer Tor, one of the city's most attractive gastronomic hotspots awaits on the seventh floor of the listed former Bayer building: the Occhio d'Oro. In addition to Italian fine dining, Frankfurters and guests can enjoy fine wines and classic cocktails there. Since March 1, Norbert Speth, the new General Manager for the two Flemings flagship establishments located in the city, has been at the helm as an expert in the hotel and restaurant industry - and with him numerous new approaches such as themed evenings, special menus and, above all, a creative wine bar concept with a view over the skyline.
Tuscan-Florentinean culinary delights above the rooftops of Frankfurt
In Italian midcentury style, Occhio d'Oro with chef Andreas Nabholz-Hoffmann brings the best of Florentine cuisine to the Main. True to the motto "Sharing is Caring", the portions are designed in such a way that they are ideal for sharing. Gourmets can choose between set menus, which take them on a culinary journey through Tuscany, or à la carte dishes for individual menus according to guests' wishes. The restaurant's classics include trofie with pulpo and orange, tagliata of beef fillet on a bed of rocket and sea bass fillet with yellow tomato sauce. The location above the rooftops of "Mainhatten" is open from Monday to Saturday from 6 p.m. and can be reached either via a barrier-free elevator or - as a special highlight - with an original paternoster elevator from the 1950s.
Creative wine bar concept
In addition to the open kitchen with chef's table and the unique roof terrace, the free-standing bar with marble tiles, oiled oak elements and hammered brass is one of the central elements of the rooftop restaurant. In future, the focus there will be more on wine. The wine list is based on three pillars. The first pillar is made up of well-known labels that many connoisseurs have already drunk and come to love. The second pillar is made up of smaller wineries and wineries from exotic countries, so that guests also have the opportunity to discover new treasures and broaden their wine horizons. The third part is made up of natural wines. Everyone should find the right wine for them at Occhio d'Oro - both in terms of the range and the price.
Hotel and gastronomy expert at the helm
The new General Manager Norbert Speth brings over two decades of knowledge from the hotel industry and has held various management positions in renowned companies. "I made a conscious decision to return to Hotel Operations. Here, I can perfectly combine my passion for working with many different people from all over the world and being a host with my passion for food and drink and my love of entrepreneurship," explains Norbert Speth. "In addition, the Flemings Selection Hotel and the associated Occhio d'Oro give me the opportunity to take both a hotel and an independent restaurant to new heights. The management of the Occhio d'Oro is of particular importance to me." "We are proud to have gained such an experienced, broad-based personality as Norbert Speth for our flagship hotel in Frankfurt. He combines great expertise in strategic management with in-depth operational knowledge of both hotel and restaurant operations," comments Rob Hornman, CEO of Flemings Hotels, on the change in leadership. Born and raised in South Africa, Speth gained international experience in the hotel industry after training as a chef at the Traube Tonbach in the Black Forest: the 45-year-old has worked in the United States, Zurich, Cologne, Berlin, Munich and Frankfurt as a hotel director, area manager and food and beverage director. From 2017 to 2021, the hotel expert was responsible for 16 Marriott brand hotels as Area Director of Operations. But that's not all: Norbert Speth also completed the General Management Program at Cornell University in New York in 2018. He strengthened Deutsche Hospitality (now H World International) as Vice President of Corporate Strategy and Openings, served as Chief Strategy and Development Officer at HRG Hotels in 2022 and most recently held the position of CEO of the restaurant and bar group the ASH.
